  1. I made it tonight. I only had baby spinach, no kale, but I just added it to the bowl and not the pot – it was perfect. Don't skimp on the garlic – I did use the six cloves but could have gone for even more. I had it with red lentil flatbread – delicious.

  5. Cool tip I learned elsewhere on YouTube: because of its water content, celery retards the formation of the Fond, the browning the bottom of the pan. Add it after browning the onion and carrot.

  7. And garlic is healthy! But there is an easier way to peel garlic and that is to lay the knife on top of the clove as you did, but rather than pressing into it, it's much easier to just pound the knife with your fist. Usually 1 good wack is enough to break the skin of the garlic, release some of the juices, and makes for very easy peeling.

I must admit, I'm not a vegetarian or vegan, but after watching this video, I rushed to the store and got all the ingredients for this and also the pumpkin/ricotta shells!
